Jackson's Farm Market Pizza or Pasta Sauce (for Canning)
24 cups tomatoes: peeled, cored, and quartered (about a half bushel of Jackson's canning tomatoes) 3 lbs. onions, peeled and cut in quarters 4 jalapeno peppers, whole (cut stem off) optional 4 green peppers (clean and cut in quarters) 6 cloves garlic, minced (or 3 tsp. canned minced garlic) 1/2 cup pickling salt (no iodine) 3/4 cup sugar 1 Tbls. Basil 2 Tbls. Oregano 2 Tbls. Parsley 2 cups vegetable oil 48-64 oz. tomato paste (depending on how thick you want it.) Cook all vegetables about 2 hours, stirring occasionally. Run hot vegetable mixture through a strainer, place in large pot and add the rest of the ingredients. Bring to a boil stirring constantly. Put hot sauce into hot jars and process according to your canner's safe processing instructions. (We use 30 minutes in hot water bath or 10 minutes at 10 # in the pressure canner.) Yield: 18-22 pints
